In a small bowl, add all ingredients for dressing + whisk until well combined.
Pour dressing over the the veggies and mix. Let the salad sit in the fridge for about 10-15 minutes and then serve with crushed peanuts as a side to any summer meal!
Notes
*Each veggie slice should be pretty thin like a "stick" and about 2-3 inches long.
