Tri-colored Stuffed Pepper

Ingredients
  • 2 peppers
  • 1 head of bok choy
  • ¼ bag of kale
  • 1 tomato
  • ½ white onion
  • 3 carrots
  • 1 can black beans
  • 2 tbsp coconut Oil
  • 1 cup of cooked quinoa
Instructions
  1. Preheat the oven to 425•F
  2. Stir fry bok choy, kale, white onion, tomatoes, carrots, black beans in coconut oil and seasoned with s&p then add in quinoa.
  3. Stuff peppers and cook on a baking sheet with parchment paper and cover with tin foil for about 25 minutes.
  4. Let cool and serve for deliciousness 😊
